Mexican tastes spill over in south-of-the-border ham and beans recipe

Tacos always have been my comfort food — a fact that sometimes maddens my husband. When he asks what I want for dinner, the answer generally is some form of Mexican or Mexican-American cuisine. My push toward this type of food is so strong that sometimes it spills over into dishes I don’t even eat. Last year, I was poking around the meat section at Dillons when I came across a poblano-seasoned ham. This spurred me on to create a twist on the traditional ham and beans. It is important to note I do not eat ham, but this recipe was vetted through my husband. Ham and beans ingredients 3 pounds of poblano-encrusted ham, cubed in 1/4-inch or smaller chunks — you can buy regular ham and cook it with poblano pepper, if you prefer 1 medium-sized yellow onion, finely chopped 1 tablespoon butter 1 teaspoon garlic powder 1 can black beans 1 can navy beans 1 dark red kidney beans 1 can Mexican Style Lime & Cilantro RO*TEL 1 can diced, stewed tomatoes 1 can white corn or hominy 1 quart chicken broth 2 cups uncooked long grain rice Instructions Sauté ham and onion in butter and garlic powder. Festival of Wreaths, Candy Cane Run, performances lead Dec. 16 events

Dec. 16 is full of family-friendly activities to attend in and around Arkansas City. Starting at 9 a.m., Santa will be at Steamy Joe for cookies and cocoa. He will be there until noon. Children younger than 12 can enjoy free cookies and cocoa upstairs while they wait for time with Santa in the Christmas tea room. “It’s going to be lots of fun,” said coffee shop owner Ruth Ryel. Griesel teams with Marine veteran Rix to collect gear for homeless vets

NEWKIRK — Native journalist Cody Griesel has banded together with a Marine Corps veteran named Michael Rix to help homeless veterans. Rix is a chaplain with Chaplain’s Federation Ministries International who has been working to gather donations for veterans. “This guy is my roommate and has bad diabetic problems, and is supposed to be in a wheelchair,” Griesel said. “During the years I’ve spent working as a journalist, I’ve seen a lot (of) charities and have helped out with a few of them, but I usually just report the pertinent information and don’t become deeply involved.” The efforts of Griesel and Rix will bring clothing, blankets, and camping gear to the homeless vets of Oklahoma City. “Even a somewhat cynical journalist sees a spot where they can help out another person,” Griesel said. “When I found myself last weekend buying an old military surplus sleeping cot from a garage sale, I knew this was one of those times.” The duo is working to collect warm clothing items, bedding, gloves, sleeping bags, socks and rechargeable cards for fast food restaurants. “The food cards allow the vets to oftentimes not only enjoy a hot meal, but have a chance to clean up in a real bathroom and warm up while they’re at it,” Griesel said. “That can be a serious morale booster for these guys.
