broccoliI always was one of those weird kids who really loved broccoli.

Truthfully, if I could have eaten broccoli at every meal, I would have.

This recipe is one that was brought out only once a year when I was a kid, but it ranked among my favorites prepared by my grandmother.

Broccoli casserole ingredients

  • 20-ounce package frozen broccoli
  • 1 can mushroom soup
  • 2 eggs, beaten
  • 1 cup Miracle Whip
  • 1/2 teaspoon salt
  • crumbled Ritz crackers


Begin by cooking the frozen broccoli according to the directions on the bag.

Drain and combine it with the rest of the ingredients, except the crackers.

Stir them together until mixed, but do not over-stir because it can break apart the broccoli.

Layer the broccoli mix and crackers in a buttered 8- by 8-inch baking dish.

Cover and bake the casserole at 350 degrees for 30 minutes.

Remove the cover, sprinkle the top with more cracker crumbs and return it to the oven uncovered for an additional 15 minutes.
