Summer meals are difficult to plan for sometimes.

Longer days make for longer working hours in some households. In ours, the days always are long.

Let’s face it — no one wants to turn on the stove or the oven when temperatures reach the upper 90s.

This chicken salad can be made using rotisserie chicken from the grocery store, eliminating the need to cook any part of the meal.

This recipe is one that came to my family in recent years, but it is one of my mother’s favorites.

Chicken salad assembly

De-bone and chop all of the meat from a rotisserie chicken.

Put this in a large mixing bowl and set it aside.

Peel the fibers from four celery stalks and dice the celery to 1/4-inch chunks.

Add the celery to the large mixing bowl. Dice a small jar of pimentos and add to the bowl.

Add 3/4 cup mayonnaise to the bowl, as well as 1 tablespoon of Cavender’s Greek All-Purpose Seasoning.

Mix well and refrigerate.

This salad can be served on crackers or as a sandwich.

It also pairs well with sliced tomato and feta cheese.
