In honor of Cowley College classes starting next week, I’m going to present two ways of dressing up average macaroni and cheese.

After all, eating like a poor college student doesn’t have to look like eating like a poor college student.

Don’t get me wrong — I love mac and cheese. But adding additional ingredients can make eating it less boring.

These two easy solutions were used in my home when my brother and I were growing up.

To start either recipe, cook two boxes of macaroni according to the directions on the back of the box.

Then add these ingredients to enjoy new flavor creations!

Monster Macaroni and Cheese

  • 1 can tuna
  • 1 can drained sweet peas

Mix ingredients and heat thoroughly.

If you have access to an oven, this heats well in a casserole dish on subsequent days for leftovers.

Adding shredded cheese also is an option, but keep in mind the oil content of the cheese — the sharper the cheddar, the more likely that it will be greasy when melted.

Poor Man’s Goulash

  • 1 pound cooked hamburder
  • 1 jar red pasta sauce
  • 1 can sliced mushrooms

Mix ingredients and heat thoroughly.

This recipe also tastes great with Parmesan cheese and red pepper seasoning.
