After nearly two months of waiting, Arkansas City residents finally will be able to sample the wares of Ninja Sushi Steakhouse.
The new restaurant, located at 1618 N. Summit St. — in the old Kentucky Fried Chicken building — will open at 11 a.m. today.
Ninja Sushi Steakhouse owners have no idea how many diners to expect on their first day of business.
“I hope it will be a lot of people,” said Ninja representative Shuo Huang.
Renovations that have been occurring inside the building for a while now include the removal of the drive-through.
The interior of the restaurant now can hold 50 diners.
“(It’s) nice for family and friends to gather around and have sushi and (other foods),” Huang said.
Compared to some other sushi and hibachi restaurants, Ninja might not be as ornate, but it will be Ark City’s first hibachi grill.
“(The owners) wanted a quiet place — a small town,” Huang said of the reason Ark City was chosen as a new location.

Ninja Sushi Steakhouse will serve Japanese hibachi and sushi, made from fresh ingredients.
There also will be separate lunch and dinner menus.
“They are pretty much the same, but the dinner (portion) is more (substantial) than the lunch,” Huang said.
Among the sushi offerings, there will be spicy tuna, eel, soft shell crab and more.
“We have a lot of rolls,” Huang said. “The sushi and the things we do are healthy for American people.”
Hibachi options range from vegetarian to chicken, salmon, New York strip steak and filet mignon.
All of these come with steamed rice and veggies.
Ninja Sushi Steakhouse will be open from 11 a.m. to 9:30 p.m. Sundays through Thursdays, and from 11 a.m. to 10 p.m. Fridays and Saturdays. For more information, call (620) 307-6663.
