It’s officially autumn and pumpkin spice has come back with a vengeance.
With cooler weather, it seems everyone goes gaga for all things pumpkin.
There are thousands of pumpkin-based recipes online, as well as hundreds of pumpkin-flavored products available in stores.
From pumpkin spice “peeps” to Chobani Greek yogurt, there seems to be no end to this plethora of pumpkin-flavored provisions.
If you happen to be a fan of this season’s flavor and like cooking your own tasty pumpkin treats, I have some recipes for you to try.
The first is pumpkin pie dip. This one is really easy to make and serves well as a light dessert for any family get-together.
The second is just as simple and also happens to be a dessert.
Pumpkin Pie Dip
- 15-ounce can of pumpkin
- one (1) box of instant vanilla or cheesecake pudding powder
- 16-ounce container of fat-free Cool Whip
- 1 tablespoon vanilla extract
- 1 tablespoon pumpkin pie spice
- 1 tablespoon cinnamon
In a large bowl, combine all ingredients. Stir until well blended. Cover and refrigerate for at least one hour before serving.
This particular dip is great with graham crackers and fresh apple slices.
Pumpkin Pie Ice Cream
- four (4) bananas
- 1 cup pumpkin puree
- 1/3 cup honey
- 1 1/2 teaspoons pumpkin pie spice
Blend all ingredients together until smooth. Place in a dish and cover to protect from freezer burn. Freeze until the correct consistency is reached.
